Once you have started creating the LO, go to the Properties panel for the LO then the Media tab. From here you can upload any type of file (doc, pdf) into the media store. Once uploaded, click on the name of the file in the list of media in order to get the url.

Then, on any page you're working on, link to the doc / pdf by selecting some link text (like "Click to load document") then right clicking and choosing Hyperlink from drop down menu. Paste in the url and click ok.

I was wondering if there was a way to add a text file e.g. pdf to a page, so that a student could open it and print off notes from the e-tutorial.

The problem you have run into recently (and you are probably not alone) appears to be due to core code changes, something that we are trying to prevent the need for in the future. Did you know for example that we now have Wordpress style plungins working in v2 as a proof of concept that can hook/filter  around 15 hook points throughout the core code to augment/change things without altering any core code? This appears to be something that would help you futureproof your upgrade path.

AFAIK, unfortunately the standard menu would not support that type of functionality.
You would need to build a custom interface. (and take into account that the HTML5 version would also need to be customized).

There may be a way to jigger the Accordion style menu.
Take a look at that.
