I used to prefer the latter because of the smaller files size e.g. recording stills rather than continuous motion and outputting as flash but with devices like iOS devices and popularity and functionality of YouTube video seems to be the best format anyway and Camtasia Studio is far more like a video editing tool than other tools. There are loads of resources and tutorials on the camtasia site and elsewhere so I think all of your listed profiles apply. It's got good options for setting up templates with intro's and outro's etc so that all teaching staff have to do is record their bit.
